Lebanese Charcoal Grill in Tring
Ask a Lebanese family what the heart of the menu is and you'll get the same answer every time: the charcoal grill. At Tarboush Tring, our grills are marinated overnight, cooked over open charcoal, and served simply with rice, salad and warm Lebanese bread — the way they have been for generations.
Here is a guide to what comes off the mangal (the charcoal grill) at our restaurant on the High Street in Tring, Hertfordshire.
The classic skewers
These are the dishes most people picture when they think of Lebanese grilling.
- Lamb Shish — cubes of marinated lamb, charcoal grilled on skewers and served with rice and salad.
- Chicken Tawouk — cubes of chicken marinated in garlic, lemon and yogurt, then grilled on skewers. Light, tender and one of our most-ordered dishes.
- Lamb Kofte — minced lamb mixed with herbs and spices, hand-shaped onto skewers and cooked over charcoal.
- Mixed Shish — one skewer of lamb shish and one of chicken shish, for guests who can't decide.
The Tarboush Mixed Grill
If you have never tried a Lebanese mixed grill before, this is where to start. Our Mixed Grill brings together skewers of lamb shish, chicken shish and lamb kofte on one plate with rice and salad — a complete tour of the grill in a single order, and great for sharing.
A little more adventurous
Once you have the classics in your head, the menu opens up:
- Baby Chicken — a whole butterflied baby chicken, deboned, marinated and cooked over charcoal. Served with bread and salad.
- Spicy Tawouk — chicken tawouk topped with a spicy garlic and tomato sauce.
- Kofte Khashkhash — kofte skewers under a spicy garlic and tomato sauce.
- Kofte Tahini — kofte on crispy Lebanese bread with a tahini sauce and salad — a Beirut classic.
- Lamb Chops — charcoal-grilled lamb chops with chips and salad, for the serious carnivore.
Shawarma, the Lebanese way
If you are searching for shawarma in Tring, here is something many visitors don't expect: at Tarboush we serve shawarma in the traditional Lebanese mezze style, spooned over hummus, moutabal or spicy hummus beiruty as a small sharing plate — not as a takeaway wrap. Try Hummus Shawarma (lamb or chicken), Moutabal Shawarma or Beiruty Shawarma as part of a mezze table. It is exactly how it is done in Beirut and Tripoli.
From the grill, but not on a skewer
The mangal handles more than skewers. From our mezze and starters:
- Grilled Halloumi — Mediterranean cheese, charcoal-grilled.
- Grilled Sujuk — Lebanese spicy sausages, briefly grilled.
- Arayes — Lebanese bread filled with minced lamb and parsley, then grilled. Crisp on the outside, juicy inside.
- Toshka and Kallaj — halloumi (and in Toshka, also lamb) folded into Lebanese bread and grilled.
- Grilled Chicken Wings — marinated and grilled to order.
- Grilled Prawns Skewers and Grilled Butterflied Sea Bass for the seafood lovers.
Why charcoal matters
Cooking over open charcoal gives the meat a deep, smoky char on the outside while sealing in the juices — something a flat-top grill or an oven simply can't reproduce. Every grill is cooked to order, so don't be surprised if mezze land on the table first and the skewers arrive a little later. That is how a Lebanese meal is meant to flow.
All halal, all cooked to order
All of our meat is halal, and everything from the grill is freshly cooked when you order it. See the full menu for prices, allergens and dietary information — there are vegan and vegetarian options alongside every section, including grilled halloumi and arayes-style alternatives.
